MUSHROOM PORK FILLET
- 1 Pork lion fillet (should be enough for approx 2 portions)
- 2 Large Flat mushrooms
- 1 tsp chopped garlic
Cut into the pork lion at about 1½ cm intervals without slicing all the way through.
Slice the mushroom about ½ cm think and slot a piece into each slit in the pork.
Place on a square of tin foil and place the remaining pieces of mushroom around the fillet.
Sprinkle with the chopped garlic.
Wrap the foil around the meat ect and create a close parcel.
Roast in the pre-heated over for about the fillet and any accompanying veg.
